Baking - Banana Bread *GOOD

Banana Bread Recipe

  • Prep time: 5 minutes
  • Cook time: 1 hour

INGREDIENTS

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

METHOD

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Desserts - Fresh Peach Delight

1 box yellow cake mix
1 pkg. vanilla pudding mix
1 c. sour cream
1/2-1 c. nuts (chopped)
1 c. milk
3 c. fresh peaches (sliced)
Cool Whip

Prepare cake according to directions on package.  Pour batter into 13x9" baking pan. Bake at 350º for 15 min. Cake will be very thin.  Prepare pudding mix with sour cream and milk. Spread over the cake, which has been cooled.  Place peaches over the pudding.  After pudding is set, spread with Cool Whip. Sprinkle top with nuts.  Refrigerate overnight.

Desserts - Strawberries 'n Cream Pie

Chocolate Pie Shell:
1 9-in. Baked Pie Shell
1 sq. unsweetened chocolate, melted

Spread the melted chocolate over cooled pie shell.  Fill w/

Filling:
1/2 lb. marshmallows
1 c. whipping cream
1 quart fresh strawberries

Melt marshmallows by heating carefully in 1/2 cup cream. Allow to cool.
Pour over whole, well-drained strawberries in shell. (save a few for garnish)
Chill at least one hour.
Whip remaining cream and spread on top before serving.

Dessert - Rhubarb Sour Cream Crunch

Crust:
1 c. corn flakes (crumbled)
1 c. flour (sifted)
1/4 c. brown sugar (firmly packed)
1 t. cinnamon
1/2 c. butter (melted)

Combine all ingredients and mix well.  Press 1/2 of mixture evently and firmly in bottom of pie pan. Reserve remaining mixture for top.

Filling:
1 egg
1 c. sour cream
1 1/4 c. sugar
3 T. cornstarch
1/2 t. cinnamon
3 c. rhubarb (diced)

Beat egg slightly. Mix in sour cream.  Add sugar, cornstarch, cinnamon.  Stir into sour cream mixture.  Add rhubarb. Spread over crumb crust.  Sprinkle remianing crumb mixture on top.
Bake 350º for aprox. 1 hour, or until knife inserted in center comes out clean.
Can be served with ice cream.

Condiments - Applesauce BBQ Sauce

1/2 c. onion (sliced)
1 1/2 T. margarine
1 T. lemon juice
1 T. cider vinegar
1/2 T. worcestershire sauce
1 1/2 T. sugar
1/2 c. ketchup
1 c. applesauce
1/2 t. salt

Saute onion in butter.  Add lemon juice, vinegar, Worcestershire sauce, sugar, ketchup, applesauce and salt.  Heat.  Makes approximately 2 1/4 cups.

Desserts - Apple Cake

4 c. apples (diced)
2 eggs
2 c. sugar
2 t. cinnamon
1/2 c. oil
1 c. nuts (chopped)
2 c. flour
2 t. baking soda
1 t. salt

Put chopped apples in a bowl.  Fold in eggs.  Add sugar, cinnamon, oil and nuts.

Sift flour with salt and baking soda.

Mix all ingredients together and beat well.  Pour into greased 13x9" baking dish.  Bake 350º for 45 min.

Icing:
1 stick softened butter
1 egg
1 t. vanilla
1 T. instant coffee (optional)
Add confectioners sugar until right consistency.

Dessert - Southern Peanut Butter Pie

1 (9 in.) pastry shell
3 eggs
1 c. dark corn syrup
1/2 c. sugar
1/2 c. peanut butter
1/2 t. vanilla
1 c. peanuts (salted)

In a large bowl, beat eggs and add corn syrup, sugar, peanut butter and vanilla.  Beat until smooth.  Mix in peanuts.  Pour into pastry shell and bake 400º for 15 min.  Turn oven down to 350º and bake 30-35 min. or until it is set and top is golden brown.  Let cool until serving time.
Pie is very rich so cut small.

Beverage - Holiday Punch

1 (3 oz.) raspberry gelatin
2 (3 oz.) cherry gelatin
3 c. boiling water
5 c. cold water
2 (12 oz.) can frozen pineapple juice
1 (12 oz.) frozen can orange juice
2 cups ice
Dissolve gelatin in boiling water.  Add cold water and juice.  Stir in ice cubes until melted.  Serve immediately.
32 1/2 c. servings.

Cookies - Toffee Cookies

1 pkg. white cake mix
1/2 c. melted butter
1 egg
5 english toffee candy bars

Crush the candy bars in the blender.  Mix all ingredients together and shape into small balls; place on cookie sheet and flatten.  Bake 375º 8-10 min. or until lightly browned.
7 Dozen.

Salad - Fruit and Vegetable Slaw

1/2 c. sour cream
1/4 c. mayonnaise
1 pkg. onion recipe soup mix
1/2 lemon - juiced
1/4 t. salt
2 c. cabbage (chopped)
11 oz. mandarin oranges (drained)
2 carrots, (chopped)
3 T. dill pickles (chopped)

Combine sourcream, mayonnaise, onion soup mix, lemon juice, & salt.  Mix well.  Chop cabbage and carrots in the blender.  Toss all ingredients together.
4-6 Servings

Condiments - Rhubarb Jam

6 c. rhubarb - cut
4 c. sugar
1 can apricot pie filling
1 orange rind
1 3 oz. pkg. orange gelatin

Mix together in large saucepan the rhubarb and sugar.  Let this stand overnight.  In the morning, boil for 10 minutes.  Add the apricot pie filling and orange rind.  Bring to a boil.  Add orange gelatin.  Pour into clean jars and seal.

A US Department of Agriculture analysis of the 1977 report of the Senate Select Committee on Nutrition and Human Needs - Dietary Goals for the United States.  States that meet the recommendations of the report will require Americans to increase the quantity of bread they eat by two-thirds and the amount of other bakery products by more than one-third.
  A one-pound loaf of enriched white bread contains 16 slices, each weighing about one ounce.  So, the USDA is saying a man meeting the dietary goals will eat a little more than 37 slices a week (or 5.3 a day); a woman will consume about 26 slices a week (or 3.7 a day); a child aged 6-8 years will eat 21 slices a week (3 a day); and a child aged 9-11 years will average 28 slices a week (about 4 a day), in order to meet the goal.
  Of all the foods available for human consumption, grain products are targeted in the report as the most needed requirement for improving and maintaining health.

Grandma Donald - Thanksgiving - Cranberry Salad

1 lb. cranberries
2 c.  sugar
1 can crushed pineapple
10 oz. small marshmallows

Sit overnight
Top with cool whip

Grandma Donald - Dessert - Butterscotch Pie

1/2 c. brown sugar
2 T. flour
salt - pinch

Beat 2 egg yolks into 1 1/2 cups milk - stir into dry ingredients.
Cook on low heat until mixture thickens.

Add 1 t. vanilla.

Grandma Donald - Desserts - Cocoa Cake

1 c. flour
1 c. sugar
2 T. cocoa

Mix flour, sugar and cocoa together.

1 c. sour milk
or
1 c. milk
1 t. baking soda
(mix baking soda into milk to make sour milk)

1 t. vanilla
6 T. melted butter
1 egg

Mix all ingredients together.  Beat until fluffy.  Bake between 350-375 for 25-30 minutes.
Very thin batter.  Cake is very moist.

Beverage - Party Punch

1 package (3 ounces) any flavor Jello gelatin
1 cup boiling water
1 small (6 ounces) container frozen limeade concentrate
2 quarts Lemon-Lime Soda
1 pint Vanilla Ice Cream

In mixing bowl, dissolve gelatin in boiling water. Add the limeade.Transfer mixture to a punch bowl and add soda and ice cream. Keep cool until ready to serve.

Yield: 20-4 ounce servings.

Beverage - Lemon Toddy

1 quart lemonade
8 ounces Gordon's Gin
2 ounces creme de cassis

Heat ingredients in saucepan until hot. Pour into mugs or cups to serve.

Yeild: 8 5-ounce servings.

Beverage - Hot Chocolate

Melt 2 ounces chocolate in 1/4 cup water. Stir constantly.
Stir in 2 cups milk, 1 cup half & half, 4 teaspoons sugar,
1/8 teaspoon salt, 1 teaspoon cinnamon, 1/8 teaspoon allspice
1/8 teaspoon ground nutmeg
Bring to boil, stirring over low heat. Simmer 10 minutes.
Beat 1 egg, 1 teaspoon vanilla and slowly add.

Beverage - Orange Vanilla Refresher

1 quart orange juice
1/2 banana
1 teaspoon vanilla
1/2 cup milk
4 ice cubes

Blend and serve immeriately

Yeilds: 5 cups

Beverage - Limeade

1/2 cup fresh-squeezed lime juice
1-1/2 cups club sode
sugar to taste

mix with ice and serve

Beverage - Mint-Apple Tingler

1 quart apple juice

1 teaspoon mint jelly

Blend and chill

Yeild : 4 cups

Beans - Michigan Bean Bake

1 jar (48 ounces) cooked Norther beans
1-1/2 pounds lean 1-inch pork cubes
1/2 teaspoon salt
1 bottle (14 ounces) catsup
3 tablespoon prepared mustard
1-1/2 cups brown sugar
1/4 large sweet onion, chopped

Combine all ingredients; mix gently but well. Place in bean pot, casserole or crockpot. Bake at 300, uncovered, for 5 to 6 hours; cover last hour. OR heat on low in crockpot overnight.

Yeild: 10-12 servings.

Earthquake

Had the sensation that my chair was moving.  Thought it odd that the wind would blow hard enough to be felt thru the foundation, then Joe came and asked if I'd felt the house shake.  He said the waterbed felt like a vibrator.

Entree - Beef - Stroganoff

1 1/2 lbs round steak - cut into thin 2 inch squares
1/2 t salt
1/8 t garlic salt
1/2 t paprika
1/8 t pepper
1 small onion - chopped
1/4 cup butter
1/3 cup mushrooms - sliced
1 cup bullion
1 small bay leaf
1 t worcestershire sauce
6 servings cooked rice or noodles
2 cups sour cream

melt butter then brown steak with all seasonings, onion and mushrooms. add bouillon, bay leaf, and worcestershire.  allow to simmer for 15 minutes.

Place rice or noodles in serving plate.  Cover with the cooked meat pieces.  Add sour cream to the sauce in pan and heat, stirring constantly.  Pour over top of meat & rice/noodles.

Candy - Pecan Brittle

2 cups sugar
3 cups pecan pieces
3/4 cup white corn syrup
1/4 cup water
3 tsp. baking soda

Combine all ingredients except baking soda in heavy pan or skillet.  Cook over medium heat, stirring constantly, until candy thermometer registers 290 degrees.  Stir in baking soda quickly; the mixture will foam up.  Pour onto greased cookie sheet and spread out with spatula.  Allow to cool thoroughly, about two hours.  Then break into pieces.  Store in air-tight containers.  Makes approx 1-1/4 lbs.

Candy - Peanut Brittle

2 cups sugar
1 cup white corn syrup
1/2 cup water
4 cups raw peanuts
1 scant tp. baking soda

Mix sugar, syrup and water in saucepan.  Cook until mixture comes to a rolling boil.  Add nuts. Continue to cook until it spins a thread that will snap.  It will then be an amber color.  This should take about 15-18 minutes.  Remove from heat.  Add soda.  Do not stir until foam disappears, then spread in a a very thin layer on greased foil.  When cook, break into pieces.
